Hey Kev,
I see that you are looking at Turnigy TR 42-60C 500Kv motor. From my limited understanding you need to settle on a prop size when choosing a motor, as the lower the Kv rating the larger the prop diameter diameter needs to be. You have indicated that you are looking at a 15x10 or 14x8 prop, these are quite large in diameter considering the model that you are fitting it to - will it hit the ground or cut the grass when the strip has not been mown for a while.
I have seen some reviews of a Great Planes Easy Sport 40 (I am guessing that this is your plane) and they have used a 12x8 prop.
Me, I use the following on my Phoenix Classic EP trainer (wingspan 1420mm, weight approx 2kg)
Motor - Himark 3526 830Kv
ESC - Conquest SJ 45Amp
Battery - 3S 3200mA 20C & 3S 3200mA 25-30C (can use a 4S 4000mA)
Prop - 11x8.5 now & originally 10x7
With the original prop and 20C battery the plane only just got of the ground but once airborne it was fine, changing to the 11x8.5 prop made a world of difference as the coarser pitch used the slower revs (3S battery compared to a 4S) and torque of the motor effectively. Then when I use the 25-30C battery taking off was never going to be a problem as the battery could deliver the required current.
I suppose what I am saying get your entire package sorted before making your purchase.
I hope this helps a little.
