Just to re-open a really old thread, I think I've found the reason why the camera is wavy, finding a solution may be a little harder but it might be worth while noting the reason in case someone else ever comes across the same problem.
Whilst researching a completly different topic (FPV) I come across the following information where they were comparing CCD and CMOS imaging cameras.
My guess is that the camera is picking up vibrations from the plane and it's using a CMOS imaging cell.
