Large aircraft will run 2 channels for ailerons, 2 for flaps, 2 for elevator, 1 for rudder at least 2 for retracts plus emergency shut downs for I/C's and even more for turbines.
Some people have aircraft that use up to 18 channels.
My humble 2 meter Seb Art Sukhoi 140 uses 2 channels for ailerons, 2 for elevator 1 for rudder, 1 for throttle and 2 channels for BEC power input, thats 8 and I dont have flaps or retracts.
So as the complexity and size of you aircraft grows........ so will your need for channels.
